| Salad of Chickpeas, Chilli, Feta and Garlic | |
| Ingredients | |
| 800g | Tined Chick Peas |
| 3 | Red Chillies, seeded and finely sliced |
| 12 | Cloves of garlic, peeled and roughly chopped |
| 3 | Red Onions, peeled and finely sliced |
| 325ml | Olive Oil |
| 150ml | White Wine Vinegar |
| Fresh Coriander Leaves | |
| Flat Leave Parsley, chopped | |
| Fresh Mint leaves | |
| 250g | Crumbled Feta Cheese |
| 250g | Sliced Spring Onions |
| Salt & Pepper | |
| Instructions | |
| 1. Fry the chilli, garlic and onions in some olive oil for about 5 minutes. | |
| 2. Add the vinegar and boil until it has evaporated. | |
| 3. Mix the chickpeas and onion mix together in a large bowl and then add the reamining ingedients. Stir gently and serve. | |
