Salad of Chickpeas, Chilli, Feta and Garlic
   
Ingredients
800g Tined Chick Peas
3 Red Chillies, seeded and finely sliced
12 Cloves of garlic, peeled and roughly chopped
3 Red Onions, peeled and finely sliced
325ml Olive Oil
150ml White Wine Vinegar
  Fresh Coriander Leaves
  Flat Leave Parsley, chopped
  Fresh Mint leaves
250g Crumbled Feta Cheese
250g Sliced Spring Onions
  Salt & Pepper
   
Instructions
1. Fry the chilli, garlic and onions in some olive oil for about 5 minutes.
 
2. Add the vinegar and boil until it has evaporated.
 
3. Mix the chickpeas and onion mix together in a large bowl and then add the reamining ingedients. Stir gently and serve.
